A custom vegan catering experience designed for a sustainability-focused conference at UC Berkeley
The Event
The Vegetarian Gourmet was selected to prepare boxed lunches for the California Green Building Conference at the University of California, Berkeley.
The conference brought together professionals and organizations focused on green building, sustainability, and environmentally responsible practices. For the event, The Vegetarian Gourmet prepared individually packaged lunches for approximately 30–40 attendees.
The menu was designed specifically for the conference, with one important requirement: every lunch option was completely vegan.
The Catering Challenge
Conference lunches need to be convenient, easy to serve, and substantial enough to keep attendees satisfied throughout a busy day of presentations, discussions, and networking.
For this event, The Vegetarian Gourmet also needed to demonstrate the variety possible within a completely vegan menu.
Rather than relying on a single standard boxed lunch, the team created three distinct lunch options, each offering different ingredients, textures, and flavors while remaining practical for a conference setting.
The goal was to show that a vegan boxed lunch could be both convenient and thoughtfully prepared, with enough variety to make the meal an enjoyable part of the conference.
Creating a Custom Vegan Menu
The Vegetarian Gourmet developed three individual lunch options for the conference.
Lunch Box 1 — Whole-Grain Sandwich & Grain Salad
The first lunch box featured a whole-grain seeded sandwich paired with a neatly molded grain salad.
The sandwich was prepared using thick, seeded whole-grain bread and a savory plant-based filling. The accompanying grain salad was presented as a molded portion and garnished with black sesame seeds and sun-dried tomato.
Fresh arugula and thinly sliced radishes added color, freshness, and texture to the individual lunch box.
The combination provided a familiar sandwich option while incorporating fresh greens and a carefully presented grain-based accompaniment.
Lunch Box 2 — Salad Tri
The second option highlighted the variety that can be achieved with plant-based salads.
The Salad Trio brought together three distinct preparations: a hearty chickpea and vegetable salad, a leafy green salad with roasted peppers, and a quinoa and herb grain salad.
Each salad offered its own combination of ingredients, colors, and textures. The trio was finished with colorful garnishes, including watermelon radish, creating an attractive presentation while giving attendees several different flavors to enjoy in one lunch box.
Lunch Box 3 — Buddha Bowl
The third lunch box featured a colorful Buddha Bowl centered around a hearty grain base and complemented by tofu, fresh vegetables, greens, and herbs.
The bowl included cubed tofu, shredded carrots, microgreens and sprouts, sliced radishes, green onions, and other fresh garnishes. Crunchy elements added another layer of texture to the dish.
Together, the ingredients created a balanced plant-based meal that was both visually appealing and practical for an individual conference lunch.
Designed for a Sustainability-Focused Event
One of the defining aspects of this project was the opportunity to create a 100% vegan menu specifically for a conference centered on green building and sustainability.
The Vegetarian Gourmet approached the assignment as more than simply providing food for a meeting. The menu was designed to demonstrate the breadth and creativity of vegan cuisine while working within the practical requirements of conference catering.
From a whole-grain sandwich and fresh salads to a tofu-based Buddha Bowl, the three options demonstrated how a vegan menu can offer variety without relying on meat or dairy-based alternatives.

The Vegetarian Gourmet prepared custom boxed lunches for approximately 30–40 conference attendees, providing three distinct vegan options designed specifically for the California Green Building Conference.
